Aunt Kathleen’s Salad
My family calls this salad Aunt Kathleen’s Salad because she would always make a salad similar to this when we came over for dinner. She would alter the veggies she put in it, but the dressing would always be the same. The recipe below is my favorite variation!
Ingredients
Dressing
- Olive oil
- Balsamic vinegar (25 Star from Di Oliva’s is my favorite)
- Dill
- Garlic powder
Salad
- Spring mix
- Cherry tomatoes, diced
- Red and/or yellow peppers, diced
- Avocado, diced
- Feta cheese
Put all of the salad ingredients in a bowl. Sprinkle the salad with dill. I go heavy on the dill. Sprinkle a little garlic powder. A little will go a long way. You can always add more. Drizzle with olive oil and balsamic vinegar. Toss the salad. I will always add a little more dill and mix again. You can add more balsamic or oil depending on your preference at this point as well. Enjoy immediately!
Variations
- You can use blue cheese or parmesan instead of feta.
- Add a protein to make it a meal!
- Swap out any veggies with your favorites.
