Mixed Berry Spinach Smoothie
With the weather getting warmer smoothies are starting to pop back into my routine. I love pairing a smoothie with my scrambled eggs in the morning. The scrambled eggs provide protein and the smoothie provides so many vitamins and minerals from the fruits and veggies added in! I love adding spinch because it blends really well into smoothies and doesn’t have an over powering taste. I like to use frozen fruit and spinach instead of ice to make the smoothie more concentrated.
This recipe isn’t too sweet and can be adjusted pretty easily. You can add protein powder (or Greek yogurt) if you don’t have another protein source and a little avocado (or nut butter) if you are looking to add some healthy fat. The nut butter, but especially the avocado will also give is a creamier taste and texture. If you do add either of these you may need to add a little more liquid. (The smoothie pictured does not include avocado or protein powder.)
If you are looking for the convenience of having a smoothie as your meal, be sure you add a protein and healthy fat. Also, pay attention to how long it keeps you full. Some people may feel hunrgy sooner after drinking their meal as opposed to eating it. That’s one reason I like to pair mine with eggs or another food item. Find what works best for you!
Makes: ~2 12 ounce serverings
Ingredients
1 3/4 – 2 cups cashew milk (or beverage of choice)
1 cup mixed frozed berries (I used the Very Cherry Berry Blend from Trader Joe’s, but any will do.)
1 cup chopped frozed spinach
Optional:
1/4-1/2 ripe avocado or 1-2 TBSP of nut butter
1 scoop protein powder or Greek yogurt
Directions
Add cashew milk to blender. If you are using a protein powder add that next. Then add the remaining ingredients. Blend until mixed and enjoy!
